Budget Busting Recipe – Curried Sausages

Curried Sausages

These days it’s pretty normal for many households to be occupied by only one adult, whether that be a single person, a student or a solo parent. With the added stress of trying to run a household on your own comes the skyrocketing costs of trying to put food on the table. Too often it will be a quick *ping* of the microwave or whatever was reduced at the market. How do I know? Because I’ve experienced this first hand, been there done that. It is with this in mind that I have added a new category under Recipes called ‘Budget Busting Recipes’. These are designed to make the most of cheaper ingredients from the supermarket and whatever you happen to have in the store-cupboard. There may be a lot more to make than you think!


This is a great way to use up leftover sausages –

Curried Sausages Recipe:

25gms Butter
1/2 Onion
1 heaped tsp Curry Powder
1 tbsp Plain Flour
150 mls Milk
2/3 Cooked Sausages
1 Tomato

Turn gas to med and place butter in pan to soften. Add chopped onion and fry gently. After a few minutes add the curry powder and flour and cook gently for a further 2 minutes. Add half of the milk and mix well, stirring constantly. Add the rest of milk and continue to stir. When the sauce has thickened add the already cooked sausages, these can be whole or cut into pieces. If you like a thinner sauce add more milk, it’s really up to you and your tastebuds! Warm the sausages through in the sauce. Serve on a bed of rice. Deseed the tomato and cut into small pieces serving on top of the curry for extra freshness and added texture.
*If you want to add some greens then a large handful of spinach added when you put the sausages in is delicious!
*For a vegetarian option replace sausages with 2 boiled eggs cut into quarters.

This recipe is for 1 person. For 2 people or 1 adult 2 children double quantities. Adapt as necessary for more.
