Char Siu Skewers and a fresh noodle salad

Char Siu Skewers

Summer generally means it’s BBQ time for many of us. Sometimes though I get inspired to try something different. With that in mind I’ve come up with these Chinese recipes that are easy, quick to make and taste delicious!

Char Siu Pork Skewers

400 gms cubed pork

1/2 pineapple

10 mushrooms

1 red pepper

Marinade

1 jar Lee Kum Kee Char Siu Sauce

4 tbspns Lee Kum Kee Premium Dark Soy

2 tbspns Lee Kum Kee Oriental Sesame Dressing

Mix the marinade ingredients together and add the pork. After giving a good stir, cover and leave to rest for a few hours. In the meantime, cut up the rest of the ingredients to bite size pieces. Place the pineapple pieces in a bowl and stir through a 1/2 tspn of the chillies from the chilli oil. Take your skewers and add the ingredients. Place on the bbq and cook for 8-10 minutes or until the pork is cooked through.

Chinese Summer Salad

2 blocks vermicelli (glass) noodles

1/2 pineapple

1/3 cucumber

2 tbspns Lee Kum Kee Chiu Chow Chilli Oil

Soak the noodles in boiling water for 3 minutes (or until soft). Dice the pineapple and slice the cucumber using a peeler. Drain the noodles and add the oil from the chilli oil jar, mixing thoroughly. Add the pineapple and cucumber. Finish with a drizzle of Lee Kum Kee Sesame Dressing.

Makes for 4 people

TIPS:

1 – If using wooden skewers, soak them in water for an hour first. This will prevent them burning on the bbq.

2 – If you don’t like things too spicy, 1/2 the amount of chilli I’ve used and then add any extra till you get what works for you

3 – Add a sprinkling of fine salt onto your pineapple before adding to the salad. It makes the pineapple juicier!

4 – I have used Lee Kum Kee products in my recipes. Available in all good supermarkets.
