Recipe – Ginger Crunch

This is a great recipe featuring spicy ginger shortbread with a yummy ginger icing. The perfect accompaniment to an afternoon cup of tea!

Base:
125gm butter
1/2 cup sugar
1 1/2 cups plain flour
1 tsp baking powder
1 tsp ground ginger

Topping:
75gms butter
3/4 cup icing sugar
2 tbspns golden syrup
3 tsp ground ginger

Cream butter and sugar together. Sift flour, baking powder and ginger in a bowl. Add dry ingredients to butter and sugar until fully combined. Put mix onto a floured board and knead. Grease a 8 x 12 inch tin and press dough into tin till the base is covered. Bake in a preheated oven at 190deg for 20-25 minutes. Whilst the base is baking make the topping. Place all ingredients into a pan and heat until everything is combined and melted. Stir all the while.
Remove from heat. Pour topping over the base when you take it out of the oven and cut into slices when warm.
