Recipe – Gingerbread Biscuits

Ginger Cookie Recipe

This is a tried and true recipe and is a great one to have on standby for special occasions. Whether it’s Christmas, Halloween or just because you fancy doing something with the kids, get involved. Enjoy!

2 cups plain flour
1 cup soft brown sugar
1 tbsp ground ginger
1/2 tsp baking soda
150gms butter (softened)
1 egg (beaten)

Mix all dry ingredients together. Add butter and using fingers, combine until a breadcrumb-like texture forms. Mix in beaten egg. Form a ball of dough. Wrap in cling film and chill in the fridge for 1/2 an hour. Onto a floured board roll out til about a 1/4 inch thick. Cut out into your chosen shapes. Place on a tray and cook in a pre-heated oven at 180deg for 8-10 minutes or golden brown.
Cool on a wire rack and then decorate to your hearts content.

If you like more spice increase the ginger (this recipe is quite mild so good for kids tastebuds)
If you think the dough is too wet add a little more flour
