Recipe – Gooey Chocolate Fudge Cookies
The weekend is nearly here and that can only mean one thing – it’s time to bake! This is a recipe I recently came across and have tweaked a little to make it more adaptable to those outside the US. It is full of all those things we shouldn’t really eat but hey, a little bit of everything does you good right?
225g brown sugar
2 medium eggs
2 tsp vanilla extract
300g plain flour
1 tsp baking powder
1 tsp cocoa powder
1/4 tsp salt
170g milk chocolate (chips or chopped)
100g dark chocolate (chips or chopped)
170g fudge chopped into small pieces
Preheat oven to 180 degC, gas mark 4. Lightly grease your baking trays ready to use.
Cream together butter and sugar. Add eggs one at a time followed by the vanilla and continue mixing. Sieve the flour. baking powder, cocoa and salt into a seperate bowl. Add the dry mixture to the wet mixture one spoonful at a time until all the ingredients are mixed together. Sir in the chocolate and fudge pieces.
Using a tablespoon drop the mixture in spoonfuls onto your prepared baking trays.
Bake for 10-12 minutes. Let the cookies cool on the tray before you transfer onto a wire rack.
Tip: If you want to add a bit of texture to your cookies you can add 100g of chopped nuts or dried fruit to the mixture. Your taste buds are the only limit!
