Budget Busting Recipe – Low-Fat Queen’s Hummus
It always amazes me how often I go to the supermarket and buy hummus. It’s so easy to make and much cheaper too! Here is my low-fat but super tasty version.
1/2 Red Pepper
2 Cloves of Garlic
10 Cherry Tomatoes
1 can Chickpeas (drained)
Splash of Hot Sauce
Throw the onion, garlic and pepper into a food mixer. Give it a quick blitz. Add tomatoes and blitz again. Finally add chickpeas, and hot sauce to taste. Blend everything together, I like to leave it a bit chunky but it’s up to you. My favourite hot sauce of the moment is A Taste of Wachaca (available in most good supermarkets).And you’re done! Because you are using cherry tomatoes you don’t need to add any oil. The juice from the tomatoes is more than enough to make a nice consistency. If you want your mixture looser just add some extra cherry tomatoes.
