Budget Busting Recipe – Potato Salad with Honey and Mustard Dressing
Summer salads don’t always have to be about lashings of mayonnaise! Try this tasty take on a potato salad with a delicious honey and mustard dressing. A refreshing alternative and lower in calories too.
3 Medium-sized Potatoes
1/2 Yellow Pepper
2 Boiled Eggs
10 Cherry Tomatoes
Handful of Chives
150ml Sunflower or Rapeseed Oil
50ml White Wine Vinegar
2 tsp Runny Honey
2 tsp Wholegrain Mustard
2 Cloves of Garlic
Cube and boil the potatoes. Drain and cool. Hardboil eggs and cool. Into a large bowl add the potatoes, chopped onion, chopped peppers, diced eggs and quartered cherry tomatoes. For the dressing place all ingredients into a jar and seal lid shut. Shake vigorously until well mixed. Pour over salad ingredients. Add salt and ground black pepper to taste. Garnish with chopped chives.
Such a simple salad to make but surprisingly delicious. For a Mediterranean twist add a handful of olives and feta cheese. Have a great summer everyone!
