Recipe – Russian Fudge

Ginger Crunch


This is super quick and tastes delicious. It also makes a great present for someone when you want to add the personal touch.

3 cups sugar
125 gms butter
1/2 cup of milk
1/8 tsp salt
1/2 cup sweetened condensed milk
1 tbsp golden syrup

Put sugar and milk into a saucepan. Heat gently, stirring until the sugar has dissolved. Add condensed milk, butter, golden syrup and salt. Stir until the butter has melted. Bring to the boil and keep boiling until the soft ball stage. Stir occasionally to prevent burning. Take off the heat and cool slightly. Beat with a wooden spoon until thick. Pour the mixture into a pre-buttered tin. When partially set mark into squares and then when cold cut. Job done!

Tip 1: Add chopped raisins or walnuts for added texture.

Tip 2: Soft ball stage is when you take some of the mixture and drop into a glass of cold water (using a tsp). You should then be able to mould into a soft ball.

Tip 3: Putting into a cellophane bag and tying with ribbon these make a lovely little gift!
