Recipe – Soda Bread
Is there anything better than fresh, homemade bread? Well it’s definetly up there. This is a great and simple recipe to make. Get the kids involved too, they are sure to love getting stuck in!
1 cup wholewheat flour
1 1/4 cups all purpose white flour
1 tsp baking soda
1/2 tsp salt
1 tsp sugar
1/4 cup rolled oats
1 tsp poppy seeds (opt)
1 cup buttermilk*
Preheat oven to 375 deg F and place rack in centre of oven. Place baking paper onto a baking tray or spray tray with a non-stick spray. Sift the flours, baking soda, salt and sugar into a bowl. Add the oats and stir together. Make a well in the centre of the dry mix and pour in half the buttermilk. Stir until the mixture is moist and then pour in the remaining buttermilk. Stir again.
Put some flour onto your hands and form the dough into a ball. Put the ball onto the baking sheet (it doesn’t have to look perfect!) and score an ‘X’ onto the top around a 1/4 inch deep. Sprinkle the poppy seeds on top. Bake for around 40-45 minutes til the loaf is brown and sounds hollow when tapped on the bottom. Leave to cool for at least 10 mins. Enjoy!
*Tip: No buttermilk? Here’s an easy substitute. Add 1 tbspn lemon juice or white vinegar to 250mks milk. Stand for 5 mins then use as necessary.
