Sweetcorn Fritter

Eek, a giant one, I’m in heaven!

As a child I knew it was going to be a great weekend when my lovely Mum would cook these tasty morsels for brunch. These fritters are my go-to ‘happy place’ filled with memories of another time. They are very quick and easy to make, the kids will love them and so will you. Enjoy!

3/4 cup of plain flour

1 tsp baking powder

1/2 tsp salt

black pepper to taste

1 egg

1 440gm tin sweetcorn

50 mls cream

2 tbspns oil

2 tbspns butter

Sift flour, baking powder. salt and pepper into a mixing bowl. Add egg, cream and mix to combine. Drain sweetcorn and add to mix. Heat oil and butter in a frying pan over a medium heat. Drop the mixture in tablespoonfuls into the pan. Cook until golden underneath then turn over and cook on the other side. Drain on kitchen towel. Job done!

Serving suggestions:

For kids – serve with ketchup

For adults – serve with a soft poached egg and salsa on top
